Indonesia vanilla extract has a sweet, creamy yet earthy flavor with a hint of smoke, dried fruit, wood and sometimes a subtle floral or spice element. It is ideal for baking darker desserts and dishes that include fruit like poached pears.

Steam Cured with the Traditional Bourbon Curing method produces a rich, creamy vanilla aroma and flavor. These beans are USDA Certified Organic Grade A Madagascar vanilla beans, the gold standard of vanilla. Three beans per package, they are vacuum sealed, and can be stored in a cupboard until ready to use. They will keep indefinitely as long as vacuum sealed.

Vanilla bean paste is thick and syrupy with the whole bean ground into it. It has black specks from the vanilla bean and seeds which give your dishes an exquisite visual appeal. Vanilla bean paste can be exchanged 1:1 with extract when you want a gourmet look and great flavor. Rwanda vanilla extract has a silky, smooth buttercream aroma with a chocolatey undertone gracefully balanced by subtle hints of citrus and a gentile spiciness. Sumatra vanilla has hints of dark chocolate and coffee. Typically Sumatra vanilla beans have a higher vanillin (that's what carries the vanilla flavor) level than most Indonesian beans so the extract is great for sweet treats like homemade ice cream and whipped creams.

Tanzania vanilla beans grow on the side of Mount Kilimanjaro in highly fertile volcanic soil of a currently dormant volcano. Vanilla beans cured at higher altitudes have a higher oil content. This silky,smooth extract is syrupy with oils with a buttery, creamy flavor.

Uganda vanilla is earthy, bold and extremely flavorful. It has an aroma and flavor reminiscent of figs, milk chocolate, and raisins with rich, buttery undertones. This extract compliments brownies, chocolate cakes, and chocolate chip cookies. This is the only extract we make with a dark liquor, and it ages for 18-24 months rather than our standard 12 months. This one is Kimber's favorite.

Vanilla sugar is granulated sugar infused with vanilla beans creating an aromatic sweetener to be used in baking, drinks and desserts. Turbinado sugar (often called "raw sugar") is a coarse, golden-brown sugar with large crystals and a mild caramel flavor from minimal processing retaining some natural molasses which gives it color and taste. We add dried, ground Madagascar vanilla beans to infuse it with a mild vanilla taste and aroma. Great in baking, drinks and desserts. Use it as you would normally use sugar.
